Yummy Veggies!
the end of summer is a great time for squash, zucchini and cherry tomatoes from the garden. This recipe contributed by Candy helps use them up and is good for you!
you aren't trying to steal tomatoes, are you?
Pinky is on duty!
Roasted Vegetables
1 Small or medium eggplant, peeled and cubed
2 or 3 small zucchini or yellow summer squash peeled and
cubed
3 or 4 large red, yellow and orange (green too) peppers,
seeded and sliced thick
1 large red onion sliced
1 vidalia onion sliced
1 pint cherry tomatoes
5-6 cloves of garlic, peeled and minced
Sea Salt, Black Pepper and Red Pepper Flakes to taste
Combine all in large mixing bowl
Add 2 Tablespoons olive oil
1 Tablespoon Balsamic Vinegar
Mix all together
Put on 2 cookie sheets w/shallow sides - spread into single
layer
Bake in oven at 400 for about 30 - 40 min. I like mine
to be caramelized.
I've also done this on the grill in a grill basket.

ReplyDeleteI've had the roasted veggies as a side dish, mixed w/pasta or rice, or by itself. This recipe lasts me through about 4 or 5 meals. And yes, Pinky did get one of the cherry tomatoes. If it was up to her, she would have eaten all 8 tomatoes from this day's yield! Candy
ReplyDeletePinky says - she caught me before I could eat the rest! However, she always enhances my dry kibble w/something good so I can't complain.
We will have to try that recipe!

I love roasted summer squash! I think I might leave out the peppers. I like them raw. :-) It sounds wonderful though!
